She said: 'I do absolutely adore him. I watch the way he is, not just with Rex, but also with Zach and Leighton, and I love him so much it's ridiculous. He's such an incredible father – it's the most attractive thing about him.'
Stacey also gave credit to Joe for how he handled the first few weeks after Rex was born, admitting she was tearful every day and he did everything he could to help.
She added that Joe spent his days making food, doing the household chores and chauffeuring her sons from previous relationships Zach, 11 and Leighton, seven, around.

The mother-of-three revealed she had forgotten how overwhelming the post-pregnancy hormones can be and she recalled going from elated to devastation in the space of a few days.
However Stacey noted that she had already put a plan in place for 'negative thoughts', after suffering from postnatal depression after the birth of Zach.
In order to combat the potential negative emotion, Stacey said she told her midwife that she'd like to be referred to perinatal mental health services.

Stacey wasn't the only one who suffered intense emotion following the birth, as Joe was hit hard by the trauma of his father's death after welcoming their son.
Stacey revealed that her presenter beau was heartbroken by the fact he would never be able to introduce Rex to his father - a London taxi cab driver who died suddenly in 1994 when Joe was aged 11.
The Loose Women panellist said on Friday's Loose Women: 'It is a trauma and I am always surprised that people are surprised that you grieve forever.
Family: The former X Factor star also has children Zachary, 11, with her ex Dean Cox, and Leighton, seven, with her ex Aaron Barham (pictured together on Friday)
'Joe lost his dad when he was 11 and it has had a fundamental impact on his life, especially when huge life events happen - even if they're really positive.
'When we had Rex, it was a trauma. At the same time as being the most wonderful thing in the world.'
Joe is also father to 12-year-old Harry, who he shares with ex Emma Sophocleous, but his late father not being able to enjoy the birth of a child 'impacts him' Stacey revealed.
Despite being 'resilient' and an 'incredible person' the former EastEnders actor is constantly dealing with the death of a parent, she added.
Stacey and Joe started dating in 2016 and moved in together at the end of 2018 before having their first baby together in May.
